OCR: STUCK FERMENTATIONS This time of year, we get dozens of calls from customers who are having problems keeping their fermentations going. Fruit wines and meads seem to be especially troublesome. We can't always figure out just why they quit, but here are a few points to check out: 1. Make sure that any grape juice concentrates or fruit concentrates that you may have gotten from the grocery store have no preservatives (sulphur dioxide is OK). 2. Check the temperature of your must. Wine yeast will not work below about 65 deg. F. This is the most 3. Make sure your must contains yeast nutrient. If you have no grape juice or raisins you should be using common problem. Energizer. The yeast need oxygen for their initial phase of multiplying in the must. This will not cause oxidized wine because the oxygen will be used by the yeast. Your acid does not need to be perfect, but if it is way out in left field, it can effect your fermentation and the flavor of the finished product. Make sure that your must does not taste very tart or very flat. If you think you have a problem we have kits which can measure acidity very accurately.
